Serious change: 2007 marked the end of stainless steel forms being used for the normal production of the well known “Comte cheese”. Servi Doryl replaced them by developing a new micro perforated technology. With the development of a particular proprietary screen it became necessary to find the perfect compromise between the “speed of drainage” and the “formation of the rind”. By introducing the plastic micro perforated mold weaves known as Servi Doryl’s T4c® history was made. T4c® became the standard reference for the manufacture of Comte cheese ever since.
